About Us

Owner, Vision & History

Brandy grew up in Center, Texas nestled in the piney woods of East Texas. She always wanted to be an Aggie, so after high school she ventured off to College Station, where she earned a degree in Ag Education. She lived in various places in our great state of Texas, but finally settled in Jacksonville.

While working at Tractor Supply she met her best friend and the love of her life, John P. Cook. They have been married for 20 wonderful years. During this time while being a full time 7th grade science teacher, cooking was always something her and John loved to do. So in October of 2014 for her 10th year anniversary, John brought home a 1988 Pace Arrow RV, which they converted into the Eat A Bite and her food trucking dreams became reality! Eat A Bite can now be seen rolling to multiple festivals at the same time with the addition of a second food truck.
